I would think that AppleTalk could keep up with most printers.

I think AppSock may be the same thing as the Universal Printing Protocol
and the JetDirect protocol.  It is basically the serial communications
protocol over TCP/IP.  PPR's "tcpip" interface program speaks this
protocol.  Because no temporary file is need, it will be much faster than
lpr when printing large files.  It is also bidirectional in some
implementations, including HP's.
